Choosing Carrots.
You should choose firm carrots with their tops. Choose those that are medium sized with a good taper because they will be more tender than larger varieties and more sweet than smaller ones. When you get home you will want to cut off the tops and store the greens in a separate bag with small wholes in it. You can keep the greens for a few days and the carrots for a few weeks.
Eating Carrots.
Raw carrots are best because they keep all of their nutrients and remain intact. To eat your carrots you will want to wash them well and scrub them clean. It is a good idea to trim the top and peel it to make sure you aren’t getting too much pesticide which is easy to do with root vegetables.
- Eat them as a snack. If you have to have some flavor take non fat sour cream or non fat plain yogurt and mix in seasonings such as garlic powder, onion powder, and pepper. Use this as the best low fat dip available.
- You can also add raw carrot to dishes such as sandwiches and salads including tuna salad and macaroni salad.
- If you are going to cook them it is best to add them to something that the nutrients will stay in such as soups and stews. Or steam them just until they are tender.
