On this recipe you can always use the phyllo dough crust that is very low fat and nutritious as well. You can find it on most grocery stores right on the freezer section. If you don’t have the time and effort to find a phyllo dough you can always use ready-made and reduced fat graham cracker crust for this pie making recipe.
How to make low fat pumpkin pie…
Ingredients:
6 sheets phyllo dough, make sure you thawed it first
Low fat cooking spray
Dark brown sugar about ¾ cup
½ teaspoon of salt
One teaspoon of ground cinnamon
½ teaspoon of ground ginger
¼ teaspoon of ground cloves
Egg substitute about ½ cup or 4 egg whites
One 15 ounce can pumpkin
One 12 ounce fat free evaporated milk
1.Make sure that you preheat your oven on 350 degrees.
2.Prepare the phyllo dough by cutting each sheet on half and stack it on wax paper or any plastic wrap that is used on baking.
3.After stacking all phyllo dough put a damp towel over on top to prevent the sheets from drying out.
4.Get your cooking pie dish and coat it with low fat cooking spray. Place half sheet of phyllo dough then spray it again with low fat cooking spray.
5.Repeat the procedure above until you completed the whole circle.
6.Fold and crimp the edges afterwards.
7.Put weights on the pie and bake them about 10 minutes or until golden brown.
8.On a medium bowl combine all the dry ingredients.
9.Beat the eggs with the pumpkin puree. Mix in the evaporated milk and stir well.
10.Add all the spices and sugar and mix thoroughly.
11.Pour into the baked pie and cook for about an hour.
Another low fat pumpkin pie recipe!
This is a no crust, no bake version of pumpkin pie but low in fat!
Ingredients:
¼ cup water
Two 1 ounce unflavored gelatin
2 cups fat free evaporated milk
¾ cup brown sugar
One 12 ounce can pumpkin
1 tsp cinnamon
½ tsp ginger
¼ tsp nutmeg
¼ tsp cloves
¼ tsp vanilla extract
1.With your non stick cooking spray, prepare your pie dish.
2.Prepare your gelatin by sprinkling your gelatin in water on a large bowl then leave for 5 minutes.
3.On a saucepan pour 1 cup fat free evaporated milk and bring into boil.
4.Remove the milk from heat then slowly whisk the gelatin
5.Mix in the reaming cup of milk then add sugar pumpkin and all spices all together.
6.Pour the mixture into pie dish then refrigerate for at least 2 hours.
